Fudgy Chocolate Avocado Muffins

Ingredients
  • 2 cups all-purpose flour (can use white whole wheat if desired)
  • ¼ cup + 2 Tbsp. Truvia Baking Blend (or about ¾ cup sugar)
  • ½ cup cocoa powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ¾ cup chocolate chips
  • 1 avocado, mashed well (about ½ cup)
  • 1 (5.3-oz) container fat-free plain Greek yogurt
  • 1 cup fat-free milk
  • ¼ cup canola or coconut oil
  • 1 tsp. vanilla
  • ¼ cup chocolate chips, for topping if desired
Instructions
  1. Preheat oven to 325ºF. Spray a muffin tin with cooking spray and set aside.
  2. In a large mixing bowl, combine the dry ingredients: flour, Truvia (or sugar), cocoa, baking soda, salt, and chocolate chips.
  3. In another mixing bowl, mash avocado with fork. Whisk in yogurt.
  4. Measure out milk, oil and vanilla and pour into avocado/yogurt mixture. Whisk together.
  5. Combine the flour mixture and avocado mixture until incorporated.
  6. Scoop into prepared pan, filling about ¾ full. Top each muffin with a sprinkle of chocolate chips, if desired. Place in preheated oven and bake for about 35 mins, until toothpick comes out mostly clean and muffins spring back when touched.
  7. Let cool and then careful extract from muffin tin and enjoy!

Green Avocado Sandwich


Ingredients:

2 slices multigrain bread...


1/2 ripe avocado
1 tbsp. green onions
3 ounces cooked boneless, skinless chicken breast, sliced
4 thin slices of cucumber
Salt and pepper to taste
1 tbsp. Lime juice
2 tbsp. Cilantro


Combine all ingredients except the bread, then spread on toasted multigrain (or your favorite) bread!
Yum!

Friday Motivation

When you hit your goal weight or finish a program take the money you put in each day and buy something new for yourself as a reward!!!
This is the slight edge effect at work!  After a while those things you didn’t want to do add up to be something that is life changing!
Every once in a while I feel like we can just use some daily motivation to keep us going!  For some reason I just can’t get moving today!  I got my workout in today and I’m eating healthy but I just want to take a nap!  I have no motivation to work and I am just tired!  So instead of forcing myself to be 1/2 productive and tired I am going to rest and chill with the family tonight!  For those of you that are full of energy and the desire to change well let these quotes and inspirational pictures motivate to kick some butt!!!!

Clean Eating Parmesan Chicken


This simple chicken recipe takes little preparation time and is totally satisfying to eat.  I really honestly enjoyed this dinner more than balsamic chicken and that is one of my absolute favorites!  I want to thank one of my challengers Nicole for introducing me to this dinner!  I usually serve it with steamed veggies like green beans or broccoli!!
 
Ingredients
  • 2 pounds chicken breasts, boneless and skinless
  • 1/4 cup gluten free bread crumbs or whole wheat panko crumbs (not gluten free)
  • 2 tbsp fresh grated Parmesan cheese
  • 2 egg whites
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 1/8 tsp lemon pepper
  • 1/8 tsp oregano
Directions
  1. Preheat oven to 350 degrees f.
  2. Break open eggs into a shallow dish and scramble well.
  3. In a medium mixing bowl, combine bread crumbs, parmesan cheese, sea salt, black pepper, lemon pepper and oregano.
  4. Dip each side of chicken breast into the egg and then into bread crumb mixture.
  5. Place in a large baking dish.
  6. Bake at 350 degrees for 45-55 minutes, or until the internal temperature reaches 165 degrees F.

Plantain Chips

I buy them, experiment with them, have failed experiments with them, perfect my dishes, and then
share the success stories.
If you like salty, crunchy, chip-like snacks, you’ll love these. They are really easy to make, pack well for on-the-go, and serve as great scoopers for salsa or guacamole.
Ingridients:

1 green plantain
1 teaspoon extra virgin coconut oil, melted
1/2 tsp of sea salt

Directions:

Set oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
Cut the ends off and then score the length of the plantain with about three evenly spaced cuts. Don’t cut too far into the flesh, you just want to cut through the skin.
Peel the plantain then slice it on a diagonal as thinly as you can consistently manage.
Toss the plantain slices with the melted coconut oil, lay out on the baking sheet, and sprinkle with the salt.
Bake for 20-25 minutes.
{Leave in longer or shorter depending on how your oven heats and feel free to remove the more well-done chips as they start to brown.}

Teriyaki Marinade


I stumbled upon this Teriyaki Marinade when I was looking for a clean eating alternative to commercial marinades.  This is super delicious!  I use it on salmon, but I’m sure you could use it on other things as well!

Ingredients:
  • 1/4 cup low sodium soy sauce
  • 1 1/2 tsp maple syrup
  • 2 tsp finely chopped garlic
  • 2 tsp lemon juice
  • 1/2 tsp sesame oil
  • 1/4 tsp sea salt
Combine all ingredients and place meat or fish in shallow baking dish and marinate for 20 minutes in refrigerator.  I turned the meat a few times to distribute the marinade evenly.
If you are going to make the salmon preheat your oven to 350 degrees and place Salmon in 9×9 baking dish that has been sprayed with clean cooking spray.  Then bake in oven for 20 minutes, baste with leftover sauce.  You can also grill the salmon as well!
This dish is great with brown rice and asparagus.  Tonight we will be eating this dish with brown rice and fresh zucchini!
